Les Coteaux Selection 2008

Mont  du Toit Kelder (Pty) Ltd.

Cabernet Sauvignon 59%;  Merlot 20%;  Shiraz 19%;  Alicante Bouschet 1%;  Cabernet Franc 1%.
P. Rossouw.
Bernd Philippi (wine maker of the year in Germany - 1998 + 2003).

W.O. Paarl, situated on the foothills of the Hawequa  mountain overlooking Wellington.

Cold winter.  Hot and dry during growing season. Vines vigorous.

Garnet red.  Elegant, subtle fruit flavours.  Slight spiciness.  Lingering mouth feel and aftertaste.  Drink with steak, stews, venison.  Drinking well now; will last at least 4 - 5 years.

Age of the vines varies from 9 to 20 plus years.  Grapes are handpicked and hand sorted to ensure only the best fruit is used for vinification.  Wine stay on skins for up to 25 days after fermentation for extra flavour.  Each variety used in the blend is vinified on its own and only blended after it has matured for some 12 months in mainly French oak barrels, about 20% new.  Some three years bottle maturation.

Alcohol:  14.5%
Residual Sugar:  2.4 g/l
T/A:  5.39 g/l
PH:  3.7
